In 1884, flour milling in Minneapolis was valued higher than in any other city in the world, and by 1899 the city outsold every other flour-milling center in the country, creating a pedigree in bulk powder handling that today's packaging automation has to match. That output ran on Saint Anthony Falls, the only natural waterfall on the Mississippi River, which for a stretch of the 19th century made Minneapolis both the lumber and flour milling capital of the United States.
